Sourdough, explained by people who bake it
We bake in Medway and get asked the same things over and over: is supermarket sourdough real, why did my starter die, why does it cost what it costs. These are the honest answers, written down properly so we can point people at them.
We are not going to publish our formulas, and any bakery that says it has is either lying or not very good. Everything else is public knowledge and there is no reason to be cagey about it.
